You can buy a purchased download song from the iTunes Store and it will be in AAC format. Follow the steps in here:

After it is downloaded, you can easily create an MP3 version.

You can also buy tracks directly in MP3 format at Amazon, Bandcamp, etc.

After the song is purchased and downloaded, you can see the track in the Music app. Right-click it and choose "Show in Finder." That will take you right to the file itself.

If you bought it on the iPhone, you can download an additional copy (at no charge!) onto your Mac. Follow the steps in here:

If you're still on High Sierra, reinstall iTunes or restore it from a backup.

If you're on Mojave, back up your data and reinstall the OS.

If you're on Catalina or newer, use Music instead.
