How do I export a document as a .docx from my iPad?

Depending on the version of pages you have, tap on the down arrow next to the document name at the top left corner of the Pages app or on the (...) icon on the top right corner of the Pages app, then tap on Export, and then select Word to export it as a Word document.

With introduction of updated versions of Apple’s productivity Apps (Pages, Numbers etc.), the print and export functions have been moved.

Print and Export are now accessed from the associated Document menu.
