Since M1 has issues to handle more than 7 or 8 devices (USB power issue) at the same time when I have 30 iPads plugged to it, I'm forced to use an old MacBook Pro that handles them perfectly.
But now Apple Configurator cannot be installed on Catalina 10.15.7....
Funny forced situation here.
Where can I download a old dmg for Apple Configurator, maybe 2.7.1?

If you previously "purchased" the app while using Catalina, then you should be able to re-download the Catalina version from the App Store while using Catalina...should be under previously purchased items.
FYI, it is best to archive apps you download from the App Store since Apple sometimes makes this very hard.
If you never downloaded Apple Configurator from the App Store using Catalina, then you won't be able to now if the App requires a newer OS. BTW, the App Store will only show "Apple Configurator" and not show it as "Apple Configurator 2" which is very confusing, but the version downloaded will show as v2.x when looking at "About this" app.
