Music: how can I change or edit song start/stop with matched songs, or unmatch specific tracks to work around it

In Music, one may indicate a new start or end point for a song (Get Info->Options). This works for songs I owned, and playback would obey the in/out point. Now that I've synced my song library, the info panel still shows that a song should stop at say, 2'30", but Music plays the matched song all the way to completion. How do I ensure specific tracks only play the section I'd indicated? As a workaround, is there a way to "unmatch" a song to re-enable the feature?

I'm not entirely certain what you mean by converting, Alan. I have a local version of the file. Since iTunes days I have indicated via Get Info->Options for particular song to stop playing at 2'30", which it did. Recently, after subscribing to Apple Music and syncing my local library, Apple found the same song in its cloud, marking my song as "Matched" (which I believe means when I play the song a 256kb/s streamed version is played rather than my local copy). Playback now ignores my setting, playing the full duration of the song. I believe this is a bug. Are you suggesting a workaround?
