Disappeared from where? The Sidebar? That does not mean it does not exist.
Do you have "Documents and Desktop in iCloud"? If you do, then Documents would appear inside your iCloud Drive.
Click iCloud Drive in the Sidebar and see if there is a Documents folder inside.

I am having the same issue. I'll add some screenshots. I'm creating files to upload to a server. In this case, this first shot isn't showing the 2012 file. It's created, it's there but it's now showing in the Finder window:
but when going to my server upload window the file shows up so it can be selected
When I restart my Mac that seems to restore functionality but I'm getting a lot of apps "not reponding" lately. Was that last upgrde to 12.6.3 buggy or soemthing???
