How can I color code appointments in Calendar? I do not want to use separate calendars.
In Calendar App go to bottom middle and tap “calendar”. Then tap “Add Calendar” on bottom left. Tap “Add Calendar” again. Now you can name a new calendar and choose a new colour including custom colours.
first, open the calendar sidebar and put a checkmark in these spots:
then when you create a new event, choose the colour on the top right of the new event menu.
and you can also use that button to change the colour of an already created event.

if the OP was using an iPhone, those steps are correct. but this question is posted in the MacBook Pro category.
On some of the events That I created prior to asking this question, when I try to change the color (calendar) the button only gives me the current choice?
