Ever since the security update to Big Sur on 23.1.23 the favicon in Safari no longer display correctly - anyone else had this issue? Apple support online have been far from helpful and could not resolve the issue for me

There was an Update to Big Sur released on Wednesday Feb 15, 2023 to address that specific Safari Issue

if you mean the favicons in your safari sidebar, then unfortunately that is expected behaviour in Big Sur. you will see the "generic" until you visit the site. then you will see the website's favicon. that is until you clear your history. then the favicons will be reverted to the generic icon.
and, before you ask, no, I don't know why.
Unfortunately that's not my experience. Up until the update to Big Sur on 23 January, all was working fine for me. Then the favicons disappeared from the Safari search bar at the top of the page, but they remained in the sidebar and also the drop down Bookmark menu. I have tried revisiting websites as you suggest but the favicon does nor re-appear. After followingApple support suggestions (clearing cache, resetting NVRAM), all favicon are now generic in all toolbars/dropdown menus. Final comments from Apple support was that if enough people complain about it on here, that will do something to resolve to. I'm not holding my breath for that to happen.

I guess I wasn't the only person to experience this - Apple finally acknowledged the problem and just issued an update to Big Sur and Safari, problem now resolved !
