This should be a pretty straightforward thing to do but I don't see any options for this? In the general instruction it says that there is a button to change the font size which I see and also a way to invert the background color and text black/white, white/black. This one I don't see and this black background color is really difficult on eyes.
I am using Keynote 12.2.1 and don't have this problem
Try resetting Keynote, its known to sort these type of issues

The version I am using is version 12.2.1 (7035.0.161).
The presentation wasn't made in KeyNote. It is Google Slides presentation that I've downloaded and opened in KeyNote. Not sure if that makes a difference?
With Keynote in Play, move the cursor over Presenter Notes and the Invert Colours button will show.
It seems that it was Dark theme set for my system. Not sure why I can't change it even though the theme is dark.
I am missing that exact option. I have A A on the left, edit on the right and no invert colours in between.
Then it looks like you don't have a version of Keynote that supports Invert Colours, it wasn't introduced until after version 9.1
