Like the OP in this thread posted, iOS’s Notes app changes the formatting when you paste text now.
And I hate it.
Still happening on Sunday, 2023 01-29.
Unlike the original poster, my notes are backed up on iCloud, but I also don’t get the formatting options that the one replies mentions.

Keeping Format of Copied Notes:
Take a screenshot of these notes, and then select the text from within screenshot. Does that keep the format, when pasted? Report back the results. I am eager to know. Ge here: Take a Screenshot on your iPhone - Apple Support
As far as my experience goes the Copy Paste option between iCloud Notes works fine for me and retains the format totally when pasted. I am not clear from where you are copying the texts to paste into iCloud Notes.
