The 35W dual USB-C Power Adapter is perfectly usable with your fifth generation iPad Pro - but will not charge your iPad any quicker than the 20W USB-C Power Adapter that was supplied with your iPad Pro. Your iPad Pro has a maximum charging rate of ~20W.

A higher output Power Adapter is useful when connecting USB peripherals to your iPad - as you have sufficient additional power-budget to power both the connected USB peripherals (e.g., USB-C hub and connected USB storage) and potentially charge the iPad at its maximum supported rate.
