Got the same problem, and just after I did the updating to Big Sur 11.7.3 ...

it's so annoying!! my sight is pretty bad, so all these greyishs icons are very difficult to see to me.

I am considering to upload the last software, the "Ventura" one, but I have it on my little Mac Air and I don't like it. I really wanted to keep the bigsur at my Macbook pro.... but this is buggering me way to much. So sad.

I HOPE APPLE listen to us and fix this bug, pretty terrible for people with bad sight problems as me, and I know we are legion :(

macOX 11.7.3 killed my favourite icons. What is ironic is that if you pull down om tabs the icons are there in miniature, just not there in gallery via in the browser. Probably therefore due to a Safari bug On Safari window the task bar icon for my 1Password plugin is white without a border, not even grey, and is rendered invisible. I have to remember where it is and click between two icons on what appears to be an empty space. 1Password then launches. At least the favourite icons have borders and a title. Not great Apple!
