Ever since the last update to 16.3, when attempting to “Show All” under photos in iMessage I get a message “More photos will be shown once Messages finishes indexing”. I have attempted a fix I found but that didn’t work. Apple is there a a bug causing this? And what is the fix for this problem?

Indexing typically occurs after an iOS update. Keep your iPhone on Wi-Fi with a well charged battery and leave it idle for a while to finish indexing.

If you still see the indexing message after, say, two days or so, contact Apple Support and seek assistance there.
And, of course, we don’t know the size of your photos or messages collection. Huge collections take longer to index.
