Connect by USB and sync. On new Macs the process uses Finder rather than iTunes. See steps in here:

How can I transfer music from an old iPod touch to an iPhone 13? I need to download music from my old iPod touch and transfer it to my new iPhone? I no longer have access to the original computer I used for the iPod sync. When I connect the iPod to a new MacBook Air, the option to “Sync” via Music tells me that the content on the iPod will be deleted and content from the new MBA will sync onto the iPod.
