is there a way to designate a long touch on the home button to take a screenshot? Or something similar. Ive tried so many “accessibility” options I’m so confused.

Your physical Home button is already “enabled” - but it cannot be used alone to trigger the screenshot.

To trigger a screenshot, you simultaneously press both the “top” (Sleep/Wake) button and the Home Button.

So, to break this down to reliable sequence that consistently works...

1) Press-and-hold the Top Button

2) Press-and-release the Home Button

3) Release the Top Button

Now, press the buttons in the stated sequence - quickly; the screenshot is triggered at (2). After a little practice, the sequence becomes second-nature - and you will trigger a reliable screenshot every time.

This support page details the principal methods by which you can trigger a screenshot:

You can also use Assistive Touch, enabled from the iPad’s Accessibility settings, to trigger a screenshot.

The first thing you have to do is turn on AssistiveTouch. To do so, follow the steps below.

Settings > Accessibility > Touch > AssistiveTouch - set to ON

The iPad User Guide describes how to add the Screenshot function to Assistive Touch. Here is a link to the relevant section of the Guide:
