Old watch still showing in Watch app on iPhone

Good day. I recently traded in my Watch 7 for the Ultra and went thru all of the proper steps to unpair and erase the 7, went very smoothly even porting the cell service over automatically.

My question is, why would the 7 still show up as one of my watches in the Watch app on my iPhone?

I went to iCloud and searched all devices and it didn't show there either. It's not a big deal, but I'd like to learn why and also remove it from the app if anyone here knows how.

It says unpair, but I can't do that since I traded it in for the Ultra. I tapped it for fun and a popup said I needed to pair the watch again before I could pair it. The Ultra is my fourth Apple Watch, and I've always traded in so I'm pretty familiar with the process, but never noticed the old watch still in the app. Maybe it happened the other times too?
