Digital Crown changing display size

We'd be happy to help out, however it's not entirely clear what might be going on. The only way your Digital Crown would change text sizes would be if you're on the setting page to adjust this. If you're on your watch face, rotating your Digital Crown doesn't do anything. Perhaps you did the following:

Adjust text size

1. Touch and hold the bottom of the screen, then swipe up.

2. Tap , then turn the Digital Crown to adjust.

Do you have Zoom turned on? If so, turn that feature off and see if the issue persists. Follow the actions here:

Use Zoom on Apple Watch - Apple Support

"Turn on Zoom

1. Open the Settings app  on your Apple Watch.
2. Go to Accessibility > Zoom, then turn on Zoom.

You can also use your iPhone to turn on Zoom for your Apple Watch—open the Apple Watch app on your iPhone, tap My Watch, tap Accessibility, then tap Zoom. Or, use the Accessibility Shortcut; see The Accessibility Shortcut on Apple Watch."

When turning the crown, what screen is your watch on? Are you editing the face when turning the crown?
