Hello, I have been using the apple pencil to journal in the Notes app. I am able to view the note as it was written on my MacBook, however, when I try to send the note to pdf, only one page is captured. There seems to be a glitch....

That is odd. You may want to copy paste the entire contents of the note to a word processor like LibreOffice, OpenOffice or Microsoft Office and saving as PDF from there. The first two are free.
Don't know why it doesn't work for you, but in Monterey works fine to get multiple pages. The only thing I can think is that it may be trying to export a selection. Try making sure nothing is actually selected in the note before exporting to PDF via print.
Try printing, and instead of the printer, print to pdf.

I export the two page " Note " to PDF on the computer and get the two pages
Note only the first page is selected in your image. If you shift-select the second page that may help.
