Remove one person from iCloud storage

If I stop sharing iCloud storage with only one family member, will he still have everything on his own device or his back up or his own iCloud storage?

You can't selectively share with individuals. It's either everybody or nobody.

What is shared remains personal. Read the section in the link below to find out what happens when you stop sharing. I you stop sharing then other members should get individual plans before you turn off sharing unless they only need 5 GB or less that they get for free.
