You’d find the IP address a connected device is using, when connected to the hotspot, on that device.
For example - if another iPhone is paired to your iPhone’s hotspot you can check for the IP address on the connected iPhone in Settings > Wi-Fi by tapping the ‘i’ next to the network name.
