Try to Force Restart your watch:

Press and hold BOTH the digital crown and elongated power buttons at the SAME TIME. Keep holding both until the screen goes dark and keep holding them both until the Apple Logo appears (takes several seconds), then let go. Sign back in when prompted and see if normal operation resumes.

If this doesn't work, the next step is to schedule an appointment at your Apple Store Genius Bar for evaluation.
