I changed the device name using the 'Settings > General > About > Name' option but it still shows the old name that came up automatically when i setup the device as a copy of the old device, how can i change this?

The only place to change the name is on the device itself (where you did). Sometimes powering the phone off and on will trigger the update to iCloud or just giving it some time.
