I have a 15" MacBook Pro, 2016 running the latest version of Monterey. The brightness of my screen STILL changes with the ambient light even though I do NOT have the Auto Adjust Brightness turned on in preferences. Any suggestions?

Try a PRAM Reset (hold the PRAM Reset for two chimes).
Are you using a camera cover, or is anything one the display glass near the top center of the display? This is where the Ambient Light sensor is located. Shadows on this part of the Display could also affect the sensor.
