When I Undo Send a second time on the same email it disappears. It is not sent and is not in drafts or anywhere else. Is there any way of finding it? It's most inconvenient to have to compose the whole thing again.

it now appears it is sent, but after a very long delay (nearly 25 mins).
So the issue appears to be that Undo Send only works once.
Until that unsend problem gets fixed, you could always, use Command S or via the menu File | Save.
That will save your email message in the Drafts folder on the left menu bar of Mail, and you can then
edit it and save again and then send again too.
