Siri and Apple Workouts

I've been using Siri to start workouts with the Apple Watch for a long time now, however when I updated my watch to watchOS 9.2, (I have the Series 7 Nike (GPS + Cellular)), Siri no longer works. I can use it to start calls, send texts, open apps or ask questions... but when I say "Start an outdoor walk." Siri reply with some version of, "I'm having a bit of trouble here. Please try again." No amount of trying again has worked for me.

Things I have tried:

• Asking Siri over and over until I am eventually cursing at my wrist.

• Restarting my watch a couple of times

• Turning wi-fi, cellular, and airplane mode on an off several times.

• I don't think you can uninstall the workouts app so, I didn't do that.

Does anyone know what to do to fix this issue?! It's driving me crazy, especially because its winter, and my watch is buried under layers of jackets when I'm going for a walk, so doing it manually is obnoxious.
