Apple Watch cell service
If my current iPhone carrier does not support the Apple Watch, can I simply purchase a plan with one of the approved carriers just for my watch?

No, you cannot. If your current carrier doesn't support Apple Watch, you can't add cellular service to your watch. Either use the watch as a GPS only model or switch to a carrier who does support Apple Watch for your iPhone.
