no matter what I do my font reverts back to TIMES. So you see I can't change to a preferred font then select all then copy and paste.

I'm having this exact issue and can't find out how to use my preferred font by default. I have installed Eina as my font and it shows in Font Book. Trying to set as "default", I set is as a favorite. In Apple Mail, I changed the font to Eina and have created signature with only that font. However, the first line of new messages still start with Times. I then have to change the font type and size.

However, I did create an extra empty line at the top of my signature with that font, so I can use the arrow key to move the cursor to the 2nd line, delete the first line (which shows Times font) start typing my email in my desired font. It's a goofy work-around, and will take some muscle memory, but it isn't hard.

Let me know if anyone else has a better idea or a proper fix.

The settings in Mail preferences are only for the user-interface elements. Since each message can have its own font, or multiple fonts, you have to set that in the message itself.

The easiest method is to setup a signature that has the font you want. Type out the content in a new message. Change the font to be your preferred default font. Select all, copy, and paste the content as a new signature and then set that signature as your default.

For your chosen font to be seen by a recipient, you have to set it for each outgoing message individually in the new message pane. Are you able to do that. (Mail preferences do not do anything regarding what recipients will see).

There are two sides to this:

1) The font set in Mail Settings for the message does not get sent with the email.

2) You have changed the viewing Font to something but when you compose an email, you see Times.

1) That's the way it works. You have to change the font in the message if you want to send a different font.

2) Try a different Font and see if that works. I think some of them don't work with Mail. I can't remember the circumstances, but I seem to remember seeing something like that and it came down to Mail not playing well with that particular font. I don't think it was Century Gothic, so there may be several it doesn't like.

That's the easiest way to make sure your font will be seen at the other end. Mail doesn't let you set a default, you have to do it for each outgoing, or piggy back on your sig as you describe.

Users who really want to set a default often switch to Outlook.

Thanks for the response and confirmation. My employer prefers I use Outlook (Office 365), but I like the plugin options of Small Cubed MailSuite (which is only available in Apple Mail) for a couple reasons and to add tags to my emails. I know Outlook has Categories, which is similar, but I have grown familiar with MailSuite and their toolset compliments my work-style. Maybe Microsoft will someday add tags to Outlook and then I'll have to re-examine my workflow with tags in Outlook, Boomerang for follow-up reminders, OmniFocus for Projects, and tags for organization when archiving.
