on Lock Screen it’s lists, “MediaRemoteUI” and I have no idea what this is and how to get rid of always being in Lock Screen. In addition to that underneath that listing always has 2 empty boxes that I’d also like to get rid of.
What Happens when you tap the "x" at the side of MediaRemoteUI

Touch and Hold the Lock Screen
Tap Customise
and Delete those boxes
When I hit the ‘x’ it clears my notifications. Everything remains the same.
when I hold down my lock button it brings me to Siri
And when I hold on phone screen when locked nothing happens
Remove empty boxes on lock screen
