I want to remove a certain game or just the achievements from that game in game Centre? IOS 15/16 is that possible?
I do not want clean all data for all games from the game Centre but just certain ones.
Because I want to restart the game

For this particular issue, we would recommend that you get in touch with the developer to see if you are able to clear their game data in any way. By uninstalling the app, it may or may not erase your saved game progress depending on how the game was set up but it likely won't remove it from Game Center.
