If you're unable to install an update from the Watch app, just try installing it directly on the watch instead. On the watch go to Settings > General > Software Update.

If you can't install it there, then try deleting and redownloading the update in the Watch app with these steps:

1. "Open the Apple Watch app on your iPhone.
2. Tap General > Software Update.
3. Delete the update file.
4. Try again to update your Apple Watch."
