I have purchased the Apple Watch Series 8 GPS + Cellular for a Christmas gift but am given 15 days to return the watch after receipt of the Apple Watch Series 8 GPS + Cellular that it will replace. This being a gift can I get till after 25 Dec to return the Watch?

We are all just other end users like you and, unfortunately, I have no specific phone number nor does Apple publish email addresses. Your best bet is to do a chat (or call) the Apple store or contact Apple support (link is in the upper right corner).Or call Apple at 800-275-2273.
You'd have to check with Apple, but as far as I know, you've got two weeks after you receive the watch.
Understand that I have 15 Days to do return. Do you have the contact details of who with Apple who can make this decision? Phone # or Email address.
Only 15 days to trade in Apple Watch?
