Before when on a call and another call was coming in we used to be able to mute the call waiting with a touch of the volume button, Now it will constantly ring until you either hang up on original call and accept or cancel call ?

Understood. The feature you're referring is mentioned in the "Silence a call" section of Answer or decline incoming calls on iPhone.
Press the side button or either volume button.
You can still answer a silenced call until it goes to voicemail.
You mentioned that you're unable to silence a call when you're on an active call. Does the same issue occur when you're not on an active call? This information will help us isolate the issue.
If you find that these buttons aren't responding for other features, If a button or switch isn't working on your iPhone or iPad may help determine whether this is a hardware issue.

Thanks for that Justin but it’s not the iPhone 6 I’m on about, I’m talking about the SE to the iPhone 14. When using old iPhones like the 6 this was possible as you described but since the 10 to the iPhone 14 it’s not possible.

the issue is only there when on an active call and try silencing a 2nd incoming call waiting.
There is no issue muting an original call to the phone with the volume button on the side of the phone. It’s only a problem for call waiting during an active call hope this helps.
