How many devices can I pair with my airpods and I modify/delete the pairings?

It looks like you checked out the article about what to do if your AirPods won't connect.
To answer your question, you can connect one AirPods per device. You can disconnect your AirPods and connect it to as many devices you want, but it can only be connected one device at a time.
The Settings may vary for each device but an iPhone for example, you can unpair your AirPods by removing the Bluetooth accessory under Settings > Bluetooth > tap the More Info "i" > Forget this Device.
