We updated our system to Ventura 13.0, the finder keeps crashing, InDesign 2023 locks up for minutes at a time.

We updated our operating system to the New Ventura 13.0, it locks up the finder and InDesign2023. The whole system is running slow.

Did you check with Adobe to see if they support InDesign 2023 (v18.*) from Oct 22, 2022 on Ventura yet? Have you checked and installed the most recent point release of InDesign v18.* or later?
