There is no means to back up from the iPhone to NAS. A Mac or Windows computer is required.

Apps and iOS don’t get backed up. Those always get re-loaded from Apple.

Photos and videos will get backed up locally via Mac or Windows or to iCloud backups, if iCloud Photos is not enabled.

It is then possible to manually move a backup from the Mac or Windows box elsewhere, including to a NAS. That backup would need to be relocated back to its original storage on the Mac or Windows box prior to being restored.
