Where are emails stored in Mac Ventura?
It looks there V9 changed to V10 and a new level called Maildata has been added.
Where are the actual "mbox" files stored?
How can I make a copy of / backup the Mail folder / mail boxes?

If you are using the Apple Mail app on your Mac and you have iCloud Sync turned on, your mail is synced with iCloud. The mail including boxes and messages wouldn't be contained in a Time Machine backup if you are wisely backing up to a external disk using Time Machine.
Tap the Apple at the top left
Tap System Settings
Tap your name at the top
Tap iCloud
Tap iCloud Drive, then Options
If Mail is turned on, you syncing mail with iCloud.
What happens if I leave iCloud on and in the Apps synched section turn off Mail? Will mail then back up to Time Machine?
I found a folder in Library - is this where Mail is stored? There are two changes since Ventura. One is V9 changed to V10. The other is that a new level has been added - Maildata.
Before Ventura - /Library/Mail/V9
After Ventura - /Library/Mail/V10/Maildata

Sorry, but I don't know the answer to that. I sync mail with iCloud, so when I read or delete a message on one device, they are synced across all my devices. I also use Yahoo Mail for personal email and Outlook Mail for work, so my emails are stored on either the Outlook Server or Yahoo Server.
