if I subscribe to Apple TV , can I stream movies and tv shows from other platforms without having subscriptions to those other ones? in essence, can 1 subscription to appletv give access to the other platforms to watch as well?

Sorry, no. An Apple TV+ subscription gives you access to Apple TV+ content, not to content from others such as Netflix, HBO Max, Hulu, etc without paying for those streaming services.
