Switching from one iPhone to a newer one
Do I transfer my SIM card from old device to new one or do I use the new SIM card that came with the new device?

The easiest thing to do is just transfer the SIM. However, a new SIM in a new phone may have enhanced features not present in the old one. The best thing would be to work with your carrier to activate the new SIM in the new phone.
