deleting a portion of a "Messages" conversation
How can I delete the older messages in a conversation without deleting the newer messages, i.e., I don't want to delete the entire conversation, just the older part.

Touch and hold one of the older messages. Choose “More” from the drop down list. Check (by tapping) the items you wish to delete, then tap the trash can at the bottom.
