Correct, they won't know what apps you download from the existing selection of shared purchases. They might notice if you download something new that nobody else has, as that would generate an email receipt, and show up under your purchases unless hidden.

Unless you have enabled purchase sharing for the family, they will not know what apps you are downloading.
If ScreenTime is enabled such that your app purchases or downloads need to be approved, then yes, but otherwise no.
