You are actually going to restore your iPhone, not reset it and if you have been backing up your iPhone you will restore from that backup and get back that data. If you have not been backing up they will disappear.

Restoring the iPhone will erase its contents. There isn't any way to recover the data from a disabled or unavailable unit.
