How do I turn off the function that changes the wallpaper from the Lock Screen when you press and hold the screen? It’s making my phone wallpaper change every time I walk around with my phone in my hand.

Welcome to Apple Support Communities. Change the wallpaper on your iPhone - Apple Support is a feature that can't be disabled in iOS 16.
If you would like to send Apple feedback about this or any other iOS features, you can do so from Product Feedback - Apple.
In the meantime, if this happens with your iPhone locked, perhaps disabling Raise to Wake will help. With this feature disabled, your iPhone display can stay asleep when raised or moved. To test, turn Raise to waker off from Settings > Display & Brightness. As a reference, check out Use Raise to Wake on your iPhone - Apple Support.
