If you mean the clock in the Lock Screen, press and hold on the Lock Screen to access the Lock Screen changer, tap on Customize, tap on the clock to bring up the clock options. Select the options you want from there.

If you only have one lock screen currently that was setup before updating to iOS 16, you will need to create a new one before you can edit its features like the clock and widgets. Tap on the (+) icon at the bottom of the screen, next to the Customize button to add a new Lock Screen.
