I update address, then it reverts to old address! How can I input new one?

Welcome to the Apple Community.

You might want to try using "Edit" to add / delete info for a contact:

Edit contacts on iPhone – Apple Support

Else, if that is already what is not working for you:

Try adding the person as a new contact, and delete the old contact entry

Manage and delete contacts on your iPhone, iPad, or iPod touch - Apple Support
