How can I correct the age of a family share person who is 59 years old but got listed as 12 years old by mistake. I want to remove her from the plan but Apple won’t let me because of her age is 12 years old on the share plan?

Since she is currently entered as a child, you will need to contact Apple. See the following from Update the birth date associated with your Apple ID - Apple Support
