Deleted from where? Depending on your settings the files may have been moved to the recycle bin and can be added back to the library if you restore them, then drag them into iTunes from the folder they've put back to, or you move the files into the Automatically Add to iTunes folder inside your media folder.

iTunes Store purchases can be redownloaded, but might need to be unhidden from your purchase history first.
