We do want to note that some Bluetooth accessories will automatically play audio on your iPhone when they are connected. Sometimes, it is expected behavior. There were some additional details you noted that we want to look into. The issue with your AirPods playing Apple Music immediately after hanging up from calls was unusual. That shouldn't occur, unless you were already listening to music and picked up an incoming call. But if you didn't have Apple Music playing or stopped it and made the call yourself, it shouldn't begin playing Apple Music in that situation. Let's walk through some standard troubleshooting for possible Bluetooth issues. You'll want to test for the issue again after each step. Some you may have already completed.

- Update to the latest iOS - Update your iPhone or iPad - Apple Support
- Toggle Bluetooth off and back on in Settings (not Control Center)
- Restart your iPhone
- Isolate the behavior to just your AirPods or any other audio Bluetooth accessory you were using before
You also mentioned "The only way I can make this stop is to delete the app then redownload it but that messes up many other things such as my alarms". Are you advising that in order to get Apple Music to stop from autoplaying through your AirPods (as example), you have to delete it entirely and redownload it. But doing so interfere with your alarms?
We want to make sure we understood, because that is a bit unusual. Are you using downloaded music for your alarms? Does force closing the Apple Music app not help?
