I'm completely new to numbers. I selected the baby record template to record weight for my pet.
I have customised the table headings: date weight and notes (for pet)
I have customised the chart to 31 days x axis, and I can't see how to customise the y axis, or how to add my data to the chart

First click the chart, then the Format (paintbrush) icon, and in the Axis Scale area under the Axis tab change 'Auto' to the values you want, and vary the number of Steps.
If you haven't done so already, be sure to go in your menu to Help > Numbers Help, and search for chart. You'll find a number of helpful explanations there.
To add data to the chart you should be able to just enter it into the table provided in the Baby Record template..
