Yes that is somewhat better than using your local network, but still slow.
The fastest and most reliable way, is to connect your old Mac’s Time Machine backup drive to the new Mac and migrate from it.
Thanks for that suggestion...my next question is if I do it that way, can I be selective as to what data I transfer?...I don't want to transfer all the data and was under the impression using Time Machine I couldnt be selective..is that correct?

Yes a CAT 6 cable between Mac’s will work fine for File Sharing.
More to the last question...if I use Time machine, what cables do I use to hook up the source to the imac or is it done through wifi?...cheers :-)
Time Machine migrates everything.
If you just want to transfer a few files, then a Ethernet connection will work just fine.
No you have to physically plug the Time Machine backup drive into the new Mac.
Which may require a USB-C to USB-A adapter if the backup drive has USB-A cable.
