Is it possible to set up a secondary user account on the iPad pro with only few selected Apps to share with the secondary user? I am trying to set up a secondary account for a kid so we could share the same iPad. I only wanted to share one or two Apps with this secondary user.

Outside of educational environments, iOS/iPadOS devices are essentially intended to be single-user. There is no provision to create additional user-profiles for multiple users. iPad is principally designed to be a single-user device - and is intended to be used as such.
Unlike PC, Mac and other computers with which you may be familiar, it is not possible to create multiple sign-in profiles. Whilst it is possible to sign-out of iCloud and other services - such that a different user can sign-in - doing so has many implications...
For example, you can only change the signed-in AppleID for the paid Apple services once every 90-days. This restriction alone makes regular swapping between users impractical.
