Apple Watch 8 not collecting/sending all data to Health app

Just got my new Apple Watch 8. Paired with iPhone, no problems. Wore watch to sleep. Not seeing any sleep stages, wrist temperatures or respiration data at all on health app. How do I get my new Apple Watch 8 to be seen as data source for respirations, wrist temperature and sleep stages?

This was a feature I was curious to see the data on. Got my watch yesterday, and today woke up, made coffee, clicked into Health app on my iPhone, and sadness. No data. I've quadruple-checked everything I can think of.
